The original Irish Coffee was invented in a little airport near Limerick, Ireland by Joe Sheridan. Like most good recipes, it was created during a point of stress. Travellers were turned away from a cancelled flight so bartender Joe whipped up this thing of beauty. Decadent, boozy, heady and a kick of adrenaline, this drink can’t make up its mind on whether its a cocktail, a late afternoon pick me up or a dessert on it’s own. Either way, we’re here for it.
For a Canadian twist, sub in maple syrup instead of sugar.
Ingredients for one person
- 1/4 cup heavy cream
- 1/4 cup Irish whiskey. Jameson is a smooth crowd-favourite
- 3/4 freshly brewed, hot coffee
- 2 teaspoons brown sugar or maple syrup
- Ground cinnamon and nutmeg (optional)

- Ahead of time, whisk the heavy cream in the mixing bowl until slightly thickened. You don’t want to hit soft peaks but for this to be a little runny. Refrigerate.
- Pour the whiskey, sugar and coffee into the glass mug and stir until the sugar is dissolved.
- Gently top the drink with the cream and, if using, add a sprinkle of cinnamon and nutmeg
