The original Irish Coffee was invented in a little airport near Limerick, Ireland by Joe Sheridan. Like most good recipes, it was created during a point of stress. Travellers were turned away from a cancelled flight so bartender Joe whipped up this thing of beauty. Decadent, boozy, heady and a kick of adrenaline, this drink can’t make up its mind on whether its a cocktail, a late afternoon pick me up or a dessert on it’s own. Either way, we’re here for it.

For a Canadian twist, sub in maple syrup instead of sugar.

Ingredients for one person

  • 1/4 cup heavy cream
  • 1/4 cup Irish whiskey. Jameson is a smooth crowd-favourite
  • 3/4 freshly brewed, hot coffee
  • 2 teaspoons brown sugar or maple syrup
  • Ground cinnamon and nutmeg (optional)

  1. Ahead of time, whisk the heavy cream in the mixing bowl until slightly thickened. You don’t want to hit soft peaks but for this to be a little runny. Refrigerate.
  2. Pour the whiskey, sugar and coffee into the glass mug and stir until the sugar is dissolved.
  3. Gently top the drink with the cream and, if using, add a sprinkle of cinnamon and nutmeg
